Spelt pancakes with buckwheat and blueberry syrup



Today is the first day of  the holiday... (we call it 'Krokusvakantie' in Dutch).
The girls are staying at my parents house for some days and my lovely man was in France for his job so it was just me, myself and i at the table this morning.  But being home alone doesn't mean that we can't make some effort for breakfast, right?

Now that i had time by my side i decided to spoil myself with  pancakes and some freshly made blueberrysyrup. I sprinkled some fresh blueberries and almonds on top and they were absolutely georgeous!

I owe this recipe to Nigella Lawson ;  I must admit i am totally inspired by her recipe for instant pancakemix (as featured in one of the best cookbooks ever; Nigella express). For years this was the favourite of my children and it is so easy to make. Since i found out four months ago that i am intolerant to wheat i decided to give it a twist. Now that i make the pancakes with a mix of speltflour and buckwheat my belly is happy and my children still love them to bits.
Note: In the original recipe Nigella used 250 ml of milk but i think it's easier to spoon when you use 200 ml.

 

Pancakemix

  •  500 gr spelt flour 
  • 100 gr buckwheat flour
  • 3 tablespoons of baking powder
  • 2 teaspoons of bicarbonate de soda
  • 1 teaspoon salt
  • 40 grams caster sugar (or vanilla sugar)
  • Mix all the ingredients together and store in a jar.

For 150g of Pancake Mix

  • 150 gr of pancake mix
  • 1 egg
  • 200 millilitres milk (i prefer half skimmed lactosefree milk but you can use any milk you want)
  • 1 tablespoon melted butter
  • add and whisk together  
  • heat a flat pan with no oil.
  • spoon drops of 1½-2 tablespoons of batter into the pan 
  • when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.
  • Should make about 15 pancakes, each about 8cm/3inches in diameter.

Blueberry syrup for pancakes

  •   mix 200 gr fresh blueberries in a pan with 1,25 dl ahornsyrup 
  • let them boil for around 2, 3 minutes
  • spoon the syrup in a can and put it on the table with the pancakes
  • topping; sprinkle some almonds and fresh blueberries on top.

Hello there and welcome to you!

I am Katoo (alias Emeraude+Compagnie) and through this blog i want to give you some insight in my daily life. I adore my family, love travelling, enjoy good food and wanna live the good life. 

About us; Koen and I met in 1997. After my study we moved together to the heart of the historical  city of Ghent. The first years we were getting the most out of life but after 10 years we were ready to take the next step. Getting pregnant wasn’t exactly a piece of cake so around that time i started my first blog on the community of Zappy Baby (this doesn’t exist anymore).

But we had luck on our side. We got two lovely girls in 4 years time (Phara, 7 years, in 2009, and Myrha, 4 years, in 2013). Although i have a lot in my life to be happy about there are few things  that fulfill my life so much like being a mother. I don’t know if there are words to describe this feeling apart from a quote that i once read  ‘Mother is another word for love’.

Four months ago, after years of coping with health problems,  i found out that i have different food intolerances. I love food a lot so it wasnt exactly my choice to cut down on the cookies and chocolates, but thanx to this experience i discovered a healthier way of life. I still can enjoy delicious food and I would love to share some tips and recipes with you on the blog.

I was thinking for a while to start a new blog and today i decided to take that jump. It s my choice to write in English, although this is not my mother language, but i hope this is an opportunity to meet people from other countries.  I guess it will not always be easy to find the right words (but is this ever gonna be easy?...). I know that i will make mistakes and i wanna say sorry for that.

I hope you enjoy this blog and i want to welcome you on this journey to simple and pure happiness with me.
